The One-Pan Veggie Scramble I Eat Every Week

A dead simple, 10-minute meal that's packed with nutrients and requires exactly one pan. My go-to when I don't want to think about cooking.

This is one of those meals I come back to constantly. It takes 10 minutes, uses one pan, and you can throw in whatever vegetables you have lying around.

What you need

  • 2-3 eggs (or just egg whites if you prefer)
  • A handful of spinach
  • Half a bell pepper, diced
  • A few cherry tomatoes, halved
  • A small onion, diced
  • Olive oil or butter
  • Salt, pepper, and whatever spices you like (I go with turmeric and paprika)

How to make it

  1. Heat olive oil in a pan over medium heat
  2. Toss in the onion and bell pepper, cook for 2-3 minutes until they soften
  3. Add the tomatoes and spinach, stir until the spinach wilts
  4. Push everything to the side, crack the eggs into the open space
  5. Scramble the eggs, then mix everything together
  6. Season with salt, pepper, turmeric, and paprika

That's it. Whole thing takes less time than scrolling through a delivery app.

Why this works

It's nutrient-dense without being complicated. You're getting protein from the eggs, vitamins from the vegetables, and healthy fats from the olive oil. No processed ingredients, no weird additives — just real food.

The beauty of this recipe is that it's flexible. Swap spinach for kale. Add mushrooms. Throw in some leftover sweet potato. Use it as a template, not a rigid recipe.
