The One-Pan Veggie Scramble I Eat Every Week
A dead simple, 10-minute meal that's packed with nutrients and requires exactly one pan. My go-to when I don't want to think about cooking.
This is one of those meals I come back to constantly. It takes 10 minutes, uses one pan, and you can throw in whatever vegetables you have lying around.
What you need
- 2-3 eggs (or just egg whites if you prefer)
- A handful of spinach
- Half a bell pepper, diced
- A few cherry tomatoes, halved
- A small onion, diced
- Olive oil or butter
- Salt, pepper, and whatever spices you like (I go with turmeric and paprika)
How to make it
- Heat olive oil in a pan over medium heat
- Toss in the onion and bell pepper, cook for 2-3 minutes until they soften
- Add the tomatoes and spinach, stir until the spinach wilts
- Push everything to the side, crack the eggs into the open space
- Scramble the eggs, then mix everything together
- Season with salt, pepper, turmeric, and paprika
That's it. Whole thing takes less time than scrolling through a delivery app.
Why this works
It's nutrient-dense without being complicated. You're getting protein from the eggs, vitamins from the vegetables, and healthy fats from the olive oil. No processed ingredients, no weird additives — just real food.
The beauty of this recipe is that it's flexible. Swap spinach for kale. Add mushrooms. Throw in some leftover sweet potato. Use it as a template, not a rigid recipe.
